This is so delicious, so nutritious and so easy to whip up, I make it about 2-3 times a month. You can use the recipe for a sandwich spread or dip of sorts, adding a little more mayonnaise or milk to thin it out some if desired. You can substitute canned tuna or other cooked fish like shrimp for the salmon.
Mash well with a fork: 1 pkg. or can boneless, cooked salmon (like the Charlie Tuna brand). Add 1/4 C. each finely chopped celery and green onion, 2 Tbs. sweet pickle relish, and 1/3 C. either my “Safe” mayonnaise or plain yogurt/sour cream (cow, soy or rice). Mix well. Try spreading on flavored crackers, in a pita bread sandwich, on a wrap, or as a dip with fresh raw veggies and chips.

These are wonderfully refreshing on a hot summer afternoon.
Add a little juice to any recipe that is too thick for you.
Berry Daiquiri
Blenderize until smooth: 2 C. slightly thawed frozen berries, 1 Tsp. sugar or equivalent sweetener, 1/2 C. any juice, 8 solid ice cubes and, if desired, 1/2 C. thawed or bottled Daiquiri mix made according to directions (increase ice cubes to 12).
Tropical Slush
Be sure to serve with one of those cute little paper umbrellas or some other tropical decoration, and a fresh mint leaf.
Blenderize until smooth:
! C. canned crushed pineapple with the juice, 1 cut-up Kiwi, 1 cut-up Mango, 1/4 can slightly thawed orange or other juice concentrate, and 12 ice cubes.
Hair of the Puppy
Blenderize until smooth. If desired, season with salt and pepper when ready to serve:
2 cut-up large ripe tomatoes with their juice, 2 Tbs. fresh lemon juice, 1-2 drops good quality Tabasco sauce (optional), 1 Tsp. Worcestershire sauce, 1/2 C. V-8 Juice, and 6 ice cubes.
New Wave Long Island Iced Tea
Blenderize until smooth:
! C. strongly brewed black and/or orange pekoe tea, 2 Tsp. Rum flavoring, 2 Tsp. sugar, 1 Tbs. fresh lemon juice and 4 ice cubes. When done, stir in 1 C. Cocoa-Cola.

Thick, mildly spicy and almost a meal in itself. Serves 4.
In a medium saucepan, saute a chopped onion in 1 Tbs. olive oil over medium-low heat. When the onion is soft, stir in 2 chopped cloves of garlic and stir. Add 1-28 oz. can crushed tomatoes, 1 C. vegetable broth, 1/2-1 Tsp. ground cumin, 2 Tbs. chopped canned mild chiles (optional), and 1 C. cooked rice. Heat thoroughly. Sometimes I also throw in 1/2-1 C. cooked pinto beans. If it gets too thick, add a bit more vegetable broth.
To serve, spoon soup into large bowls. Top with shredded cheddar cheese or veggie cheese, a generous spoonful of both guacamole and sour cream (or soy-based “sour cream”), and restaurant-style corn tortilla strips.

Spring has sprung and there are some wonderful produce choices.
Artichokes, asparagus, Haas avocado, dill, fava beans, beets, chard, garlic, kale, leeks, Morel mushrooms, English shelling peas, parsley and spinach – Grapefruit, oranges, field rhubarb and strawberries.
Quick Microwave Asparagus
Wash and trim fresh asparagus spears. Place in a lightly olive oiled microwave-safe dish, with the woody ends pointing outwards. Cover with 1/4 C. warm water and juice of 1/2 lemon. Cover. Microwave 5-6 minutes until tender but still crisp. Drain.
Orange-Strawberry Salad
In a serving bowl, cut orange sections from 4 peeled oranges with their juice, and 1 pint sliced strawberries Mix with 1/4 box orange or berry flavored regular or sugar-free Jello, and 1 C. cottage cheese or Lite Kool Whip. Sometimes I also add halved grapes, chopped apple and tiny colored marshmallows. Any way you make this salad, it is a kid favorite!

IBS is a common chronic digestive and bowel disease called Irritable Bowel Syndrome that often goes undiagnosed for years, as was the case with yours truly. According to WebMD (webmd.com) Magazine, here are the most common symtoms:
You have frequent abdominal pain.
Your stomach feels bloated.
Having a bowel movement relieves the ache or discomfort (I have found that is not always the case: see below*).
How often you have a bowel movement has changed.
The stool becomes lumpy and hard, or loose and watery.
Having a bowel movement feels uncontrollably urgent, difficult to pass, or unfinished.
You notice mucus in the stool.
*Tell your doctor all your symptoms even if you believe they are unrelated. Each person’s case is different but does present some digestive and/or bowel problem. The important lesson in addressing your symptoms and being diagnosed is that you will learn that you can certainly find relief through aggressive lifestyle changes, and sometimes medications also.
Are you diabetic? Very often, diabetics also suffer digestive and bowel problems. If you notice ANY unusual symptoms, please consult your doctor.
